Beef in O'Hanlon's Port Stout

(Serves 4)
Preparation: 20 mins Cooking time: 2hrs 45min

1kg (2lb) shin of beef
50g (2oz) plain flour seasoned with salt and pepper
2 large carrots, peeled and diced
2x15ml tablespoons olive oil
1 large onion peeled and sliced
300ml (10 fl oz) of O¹Hanlon¹s Port Stout*
450 ml (15 fl oz) water/stock
1 bayleaf
50g (2oz) prunes stoned, and soaked in water
Salt and freshly milled black pepper
1 x 15ml tbsp finely chopped parsley

  1. Trim meat from bone, removing excess fat and cut into cubes.
  2. Pop meat into a polythene bag with the seasoned flour and shake well to coat.
  3. Heat oil in casserole, fry meat until golden brown.
  4. Add onion and continue to cook for a few minutes.
  5. Stir in any remaining flour and add water or stock, O¹Hanlon¹s Port Stout, carrot and bayleaf.
  6. Bring to the boil, reduce heat and simmer gently for 2 hours.
  7. 1/2 hour before end of cooking time, add the prunes.
  8. Before serving, remove bayleaf, adjust seasoning and sprinkle with parsley.
  9. Serve with organic potatoes, boiled in their jackets.

    *Cooking can be thirsty work. This leaves 200ml as a richly deserved 'cook's nip'. Enjoy!
